Diastase \Di"a*stase\, n. [Gr. ? separation, fr. ?, ? to stand apart; dia` through + ?, ?, to stand, set: cf. F. diastase. Cf. Diastasis.] (Physiol. Chem.) A soluble enzyme, capable of converting starch and dextrin into sugar.
